No class on Thursday 27 September as the school has it's open day. Alternative class to be decided.
This class will cover the basics of preparing cakes and cupcakes using fondant and buttercream icing and the most current decorative techniques and finishes.
No previous cake decorating experience is required but a basic competence in baking is preferable as students will be expected to bring baked and cooled sponges to the classes ready to be worked on.
The course will be based around tutor demonstrations and independent work supported by the tutor. Whilst I have planned a comprehensive 10 week course there will also be the opportunity for flexibility should the group want to cover a particular technique
Week 1: 3-layer 'naked' cake with buttercream piping, meringues and fresh flowers.
Week 2: Cookies: flooding, piped fine decorative finishes, adding edible gilding using edible metallic paints.
Week 3: Sugar flowers- making simple wired flowers, adding lustres and centres, leaves and creating small posies.
Week 4: Ombré 'petal' cake: a new and stunning technique using coloured buttercream piping to create an ombré effect.
Week 5: Edible painting, drawing and 'blackboard' techniques. A unique way to create a completely original and personalised piece of work on a cake!
Week 6: 'Cube Cakes' - how to make and decorate individual 'fondant fancy'-sized cakes. These little cakes are gorgeous to look at and to eat!
Week 7: Adding sugar ruffles to cakes - a simple but effective technique for you to create and attach fine layered ruffles to the sides of a cake to create a delicate frilled texture.
Week 8: Halloween 'Pinãta' cake- create a cake with a surprise inside, using design inspiration from Halloween!
Week 9: Simple stacked cake: learn how to level, dowel and stack a cake - a really useful skill to have that can be used for wedding, christening, birthday and other celebration cakes.
Week 10: 'Showstopper' week!! Students create their own final piece of work using any of the techniques we have learned.
